Hello! I've just started the course. I just finished the first ever audio introcution. Regarding this conversation between Sayaka and Shota, may I clarify why Shota replied to “Ogenki desu ka” with “Hai, genki desu” while Sayaka replied with “Watashi mo genki desu”? Can't Sayaka reply with also just “Hai, genki desu”? Did she reply with “Watashi mo” so that the “too” is included for the sake of the lesson? Thank you so much!

That's correct: in this case, Sayaka responded with “Watashi mo genki desu" “I am well too” to illustrate how “watashi mo" could also be used to answer the question “Ogenki desu ka?” ”How are you?" 

Sayaka could also respond with “Hai, genki desu”  “Yes, (I) am well” here, which would be perfectly correct; however, she uses "watashi mo" here  to show that she too is doing well.
