You could, but it wouldn't "sound" nice ( if you know what i mean). for example, if one was to say "that mountain is so high" he would say it as "vo pahaad bahut uucha hai" and similiarly "those mountains are so high" one would say "vo pahaade bahut uuchi hai". there is not too much of a difference but a subtle one.
