What are the big differences in pronunciation and use of words and gramar?

You could write a book about this topic. A huge difference is the use of vosotros. Only Spain uses that (with rare exception). Many words are different across many countries and Spain is no different. Spain uses the formal more than many countries. The letters "c" and "z" are pronounced differently in Spain if they are before "e" and "i" - in Spain, they sound like a soft "th" while most other places it sounds like "s". Just a sample of the differences for you.

It might be helpful to think about the difference between Latin American Spanish and Spain Spanish as being similar to the difference between North American English and British English: speakers of either variety can still understand each other because they're still using the same language; however, they will use different pronunciation and they will have some differences in vocabulary.

 

So indeed, which variety of Spanish you learn isn't a huge deal: you're still learning the Spanish language. However, it's worth keeping in mind that if you learn, for example, Spain Spanish and then travel to Latin America, you will be using some words that won't sound normal to Latin American Spanish speakers. So if you plan to spend all of your time in Latin America, it's best to focus on Latin American Spanish.

 

As for vosotros, this is a type of “you” that is used when you're speaking to multiple people informally. In countries where vosotros isn't used, ustedes is used instead. You can read more about this in Lesson 1.10: “'You,' ‘He’ and Other Pronouns” under the heading “Which ‘You’ Should You Use?”
