In 2.2 Amy states that saying Bueno me voy means well I am off. Is there a good way to know when to substitute bien and bueno?

Generally bien means well and so is used with verbs (trabaja bien), whereas bueno means good and is used with nouns (el restaurante es bueno).

I've often heard *bueno* used to mean "well," not as an adverb but as a word like "pues": "Well, the thing is...." or "Well, I don't think so."

Remember that "Bueno" can also be used as "OK" which would probably explain the above.
