Los domingos me levanto a las ocho as I understand it is the proper way to say I get up at 8 on Sundays. However I wonder why one can't use Yo as that means I and say Los domingos yo levanto a las ocho.

Levantarse is a reflexive verb that means to get up. Levantar means to lift or raise. So the me, te, se, nos, os (in Spain) and se (se is 3rd singular and 3rd plural) are required to take on that meaning.
You could use yo, but you must also use the me (in this example). Los domingos yo me levanto as las ocho. But this would probably sound odd unless you were trying to strongly emphasize that YOU are getting up then.
